Plans for a new First Watch restaurant location have been submitted to the city. The proposed site is on Hwy 6, situated between Jiffy Lube and Arby’s. I will provide updates on the timeline if the city approves the plans.
This Spring, the median on 400 E near 1000 N, located at the traffic light between the Costco gas station and the Nothing Bundt Cakes shopping plaza, will be reconfigured. This modification will create more space for vehicles making left-hand turns in the light queue.
Waffle Love announced they will be adding a location inside the current Little Acorn restaurant off Hwy 6 and Powerhouse Road. Little Acorn is remodeling and both restaurants should be opening around Valentines Day.
Froyo (frozen yogurt) is currently under construction next to Aubergine Kitchen in the Target shopping center and plans to open in February.

Mapleton’s Burn Bright event will be held on Friday, January 16th starting at 5pm in the field next to Mapleton City Hall. Burn Bright, a community bonfire event focused on reflection, renewal, and setting positive goals for the year ahead. This unique Mapleton tradition invites neighbors to come together, let go of old habits, and spark something new—side by side. Come enjoy food, entertainment and watch everyone’s Christmas trees go up in flames.
Mapleton City has plans to build a bike park on city-owned land between Harmony Ridge and Mapleton Village. The proposed bike park will be nearly 50 acres and include mountain biking trails and jump lines, and BMX biking infrastructure such as a pump track and skills loop.
